A tasty upgrade to the classic zucchini fritters by adding Halloumi and a delicious Avocado Salsa.

Zucchini and Halloumi Fritters with Avocado Salsa
Ingredients
- 300 g zucchini, grated
- 1 onion, grated
- 250 g Olympus Halloumi , grated
- 1/2 cup rice flour
- 2 tsp lemon zest
- 2 eggs
- 1 Tbs fresh dill, chopped finely
- 1 Tbs fresh mint, chopped finely
- light olive oil, for frying
- salt and pepper
Salsa Ingredients
- 1 avocado, diced
- 1 small red onion, finely diced
- 1 tomato, finely diced
- 1 Tbs olive oil
- 1 Tbs lemon juice
- salt and pepper
Instructions
- Drain as much liquid from the grated zucchini as possible. In a bowl, combine zucchini, onion and Olympus Halloumi.
- Add lemon zest, dill, mint, eggs and flour to the bowl and mix well. Season to taste.
- Shape the mixture into 12 fritters and place on a tray. Refrigerate for 30 minutes.
- Heat the oil in a frying pan over medium heat and cook each fritter for 1-2 minutes per side until golden brown. Drain on paper towel and keep warm.
- To make the avocado salsa. Combine all the salsa ingredients - avocado, red onion, tomato, lemon juice, olive oil and seasoning - in a small bowl and mix gently.
- To serve spoon a little salsa on top of each fritter and serve.
