Roasted Capsicums with Olympus Halloumi, Chilli and Pine Nuts

- 1 yellow capsicum, halved and de-seeded
- 2 red capsicums, halved and de-seeded
- 200 g Olympus Halloumi , sliced
- salt and pepper
Dressing
- 1 lemon, juiced
- 1 garlic clove, crushed
- 3 Tbs pine nuts, toasted
- 1 red chilli, finely chopped
- 3 Tbs olive oil
- salt and pepper
Preheat oven to 180C - 200C. Put capsicums on a baking tray. Season and drizzle with olive oil. Bake for 10-15 minutes until soft.
Grill the Olympus halloumi until golden brown and place 1 piece inside each half capsicum.
Return to oven until capsicum halves are coloured.
In a small bowl whisk all dressing ingredients together well.
Arrange capsicum halves on plate and spoon the dressing over around plate.
