Roasted Capsicums with Olympus Halloumi, Chilli and Pine Nuts

Ingredients
  

  • 1 yellow capsicum, halved and de-seeded
  • 2 red capsicums, halved and de-seeded
  • 200 g Olympus Halloumi , sliced
  • salt and pepper

Dressing

  • 1 lemon, juiced
  • 1 garlic clove, crushed
  • 3 Tbs pine nuts, toasted
  • 1 red chilli, finely chopped
  • 3 Tbs olive oil
  • salt and pepper

Instructions
 

  • Preheat oven to 180C - 200C. Put capsicums on a baking tray. Season and drizzle with olive oil. Bake for 10-15 minutes until soft.
  • Grill the Olympus halloumi until golden brown and place 1 piece inside each half capsicum.
  • Return to oven until capsicum halves are coloured.
  • In a small bowl whisk all dressing ingredients together well.
  • Arrange capsicum halves on plate and spoon the dressing over around plate.
