Zucchini and Halloumi Fritters with Avocado Salsa
Instructions
  1. Drain as much liquid from the grated zucchini as possible. In a bowl, combine zucchini, onion and Olympus Halloumi.
  2. Add lemon zest, dill, mint, eggs and flour to the bowl and mix well. Season to taste.
  3. Shape the mixture into 12 fritters and place on a tray. Refrigerate for 30 minutes.
  4. Heat the oil in a frying pan over medium heat and cook each fritter for 1-2 minutes per side until golden brown. Drain on paper towel and keep warm.
  5. To make the avocado salsa. Combine all the salsa ingredients - avocado, red onion, tomato, lemon juice, olive oil and seasoning - in a small bowl and mix gently.
  6. To serve spoon a little salsa on top of each fritter and serve.
