Weekends are the best aren’t they? If you love cheese, then treating yourself to a delicious halloumi cheese breakfast is a craving which is bound to set in. If you’re out and about, you can visit one of our amazing cafes across Australia who serve up delicious breakfast food all weekend. Or, if you’re feeling like lazing around in your PJ’s with a cup of coffee for a little longer, why not make it yourself? There’s nothing better than a DIY fried breakfast when you have the time. This version combines delicious vegetables with Olympus Halloumi and the added touch of a little smoked salmon. We call it the ultimate halloumi cheese breakfast, because it is the perfect balance between healthy and decadent.

This recipe is very quick, and allows you to have two pans on the go at once. If you don’t feel confident, you can use one, using your oven to keep things warm until you’re ready to serve. If you really don’t like salmon, a nitrite-free bacon swap-out never disappoints.

Instructions
  1. Heat oven on low approximately 100 degrees or a ‘keep warm’ setting
  2. Heat olive oil in two non-stick frying pans
  3. Crush garlic clove and add to one pan, stirring until fragrant.
  4. Lightly season mushrooms and place stalk side down in the first pan.
  5. Season tomatoes with salt and a sprinkle of sugar. Place cut side down in the second pan.
  6. Cook both for approximately 3 minutes on one side. Turn mushrooms and cook for a further 5 minutes. Turn tomatoes and cook for a further 2 minutes. When cooked, transfer to oven to keep warm.
  7. Heat olive oil in the pan the tomatoes were in, add spinach, letting it wilt slightly before removing and warming in the oven.
  8. Add olive oil to remaining pan on a medium to high heat. Crack eggs into the pan. When they start to sizzle, turn heat down to cook slowly before transferring to serving plate.
  9. Once your eggs are turned down, add halloumi slices to the other pan on a medium heat. (No need to add oil).
  10. Watch carefully to avoid burning. Turn after approximately 2 minutes to cook for a further 1-2 minutes.
  11. Meanwhile pop your bread into the toaster to cook.
  12. Assemble all the ingredients on your serving plate, adding slices of smoked salmon to serve. Drizzle with a balsamic glaze or reduction or a smoked honey to taste, or omit if you prefer.

Keto variations

If you are on a keto or low carb diet, this ultimate halloumi cheese breakfast is perfect with either salmon or bacon. Either way, this meal is high in good fats and also includes protein and nutritious vegetables. Have it any time of the day! You could also slice up some avocado and add mayonnaise instead of a sweet serving sauce. Incorporating halloumi for a keto diet works well, as it is slightly higher in fat. A lower salt halloumi with only pure ingredients is best for overall health, whatever your diet plan.
