Roasted Capsicums with Olympus Halloumi, Chilli and Pine Nuts
  1. Preheat oven to 180C - 200C. Put capsicums on a baking tray. Season and drizzle with olive oil. Bake for 10-15 minutes until soft.
  2. Grill the Olympus halloumi until golden brown and place 1 piece inside each half capsicum.
  3. Return to oven until capsicum halves are coloured.
  4. In a small bowl whisk all dressing ingredients together well.
  5. Arrange capsicum halves on plate and spoon the dressing over around plate.
