  1. Preheat oven to 200 deg C, 190 deg C for a fan forced oven
  2. Peel potatoes and cut into pieces of approximately 3 cm in size (For a medium potato this is quartered)
  3. Add potatoes to a saucepan of water and bring to the boil on a high heat
  4. Par-boil for 8 minutes before draining completely
  5. Transfer potatoes to a large roasting pan
  6. Add crushed garlic, olive oil, lemon juice and dried oregano to the pan, toss until well combined and potatoes are completely covered in oil
  7. Sprinkle with pepper and sprinkle or grind salt over to finish
  8. Roast in oven for approximately 40 minutes or until golden brown, turning halfway
  9. Transfer to a serving dish, and top with crumbled fetta cheese
  10. Serve immediately, or make ahead and reheat in the oven approximately 20 minutes until warmed through.
