Banana Bread with Cinnamon Olympus Ricotta, Walnuts and Honey

- 2 cups self-raising flour, sifted
- 1/3 cup brown sugar
- 100 g walnuts, chopped finely
- 1 tsp bicarbonate of soda
- 2 eggs
- 1 cup milk
- 300 g Olympus Ricotta
- 2 ripe bananas, mashed
- 3 tsp cinnamon
- honey to drizzle
Preheat your oven to 180°C. Grease and line a 21cm x 9cm loaf tin.
In a large bowl combine flour, bicarb, walnuts and sugar.
In another bowl mix eggs, milk and banana.
Make a well in the centre of dry ingerdients and slowly add wet ingredients while mixing. Combine well.
Spoon mixture into your loaf tin and place in pre-heated oven. Bake for 50 mins.
Allow to cool, then slice into 2cm thick slices and toast until golden.
Combine Olympus Ricotta and cinnamon. Spoon mixture onto bread and drizzle with honey.
