Banana Bread with Cinnamon Olympus Ricotta, Walnuts and Honey

Ingredients
  

  • 2 cups self-raising flour, sifted
  • 1/3 cup brown sugar
  • 100 g walnuts, chopped finely
  • 1 tsp bicarbonate of soda
  • 2 eggs
  • 1 cup milk
  • 300 g Olympus Ricotta
  • 2 ripe bananas, mashed
  • 3 tsp cinnamon
  • honey to drizzle

Instructions
 

  • Preheat your oven to 180°C. Grease and line a 21cm x 9cm loaf tin.
  • In a large bowl combine flour, bicarb, walnuts and sugar.
  • In another bowl mix eggs, milk and banana.
  • Make a well in the centre of dry ingerdients and slowly add wet ingredients while mixing. Combine well.
  • Spoon mixture into your loaf tin and place in pre-heated oven. Bake for 50 mins.
  • Allow to cool, then slice into 2cm thick slices and toast until golden.
  • Combine Olympus Ricotta and cinnamon. Spoon mixture onto bread and drizzle with honey.
