There is nothing more light, fluffy and decadent than a delicious ricotta pancake. Ricotta cheese gives pancakes the extra moist texture that may be lacking in a traditional pancake. They also taste a little like a light cheesecake. What’s not to love about that? So, what is the secret to a moist, airy ricotta pancake? Well, Olympus Ricotta of course 😉 Seriously though, ricotta pancakes are very easy, and you’ll love the end result. Today is Shrove Tuesday, also known as Pancake Day! Today we celebrate the pancake, and all its rich goodness. Shrove Tuesday is traditionally when pancakes are prepared and indulged in prior to the fasting of Lent. To celebrate today, we show you three delicious ricotta pancakes: low carb lemon ricotta pancakes, buttermilk ricotta pancakes, and dark chocolate ricotta pancakes. The only question is, which recipe will you choose first?
1. Low carb lemon ricotta pancakes
For those of you out there doing keto, don’t think that Pancake Day is not for you! These tasty Gluten Free Lemon Ricotta Pancakes from the Healthy Recipes blog are not only gluten free, but low carb too. They are made with coconut flour, and flavoured with vanilla and lemon. Ricotta cheese gives you plenty of protein, but you could also experiment with adding in some protein powder to boost it even further! Buttermilk makes pancakes soft and fluffy in texture. When combined with ricotta, the end result is next-level creamy and delicious!
